CFD Modeling of Heat and Mass Transfer for Agricultural Products Drying


Moisture distribution during rice kernel dryingDrying is one of the most common methods of preserving food, and involves a complex combination of transport phenomena such as transfer of  heat and the removal of moisture from a food substrate. Drying systems optimization is still sought nowadays and therefore full understanding of these phenomena can help to improve this process and hence the product quality.

Computational Fluid Dynamics (CFD) is a powerful numerical method, which can help to shorten product and process development cycles and optimize processes to improve energy efficiency and environmental performance. By including a heat and mass transfer model within CFD simulations, one can achieve necessary distributions of scalar quantities in each phase, such as temperature and species mass fractions, as well as the heat and mass transfer coefficients and heat and mass fluxes.
