(23-10-2020) On October 15th 2020, Viet Nguyen defended his PhD entitled 'Fat crystallization of palm-based blends with anhydrous milk fat'.

On October 15th 2020, Viet Nguyen defended his PhD entitled 'Fat crystallization of palm-based blends with anhydrous milk fat'. His research aimed at better understanding the interaction between palm blends and anhydrous milk fat in formulation of shortenings and margarines. Model fat blends were investigated at lab and pilot scale to obtain information on crystallization kinetics, microstructure development, hardness and post-crystallization effects upon storage. The research resulted in 4 A1 papers and 3 conference papers. Congratulations Viet!
