Mathieu Balcaen


Mathieu BalcaenMathieu started working in the PaInT research group in september 2012 on a Flander's Food project. In this research, double emulsions of the water-in-oil-in-water type were the subject. More specifically, the application of these type of emulsions in light food products or as a carrier of sensitive ingredients was examined.

After finishing this project in september 2014 Mathieu continued his research on double emulsions but now as an assistant of Prof. dr. ir. Paul Van der Meeren.
