Arnout DeclercqThe research Arnout is conducting focuses on the influence of fat crystallization on functional properties and physicochemical stability of double emulsions. More specifically the purpose of his research is to find a proper method to quantify the amount of solid fat in double emulsions (e.g. by density measurements, pfg-NMR or DSC) and to investigate which formulation parameters influence the amount of solid fat.

This knowledge will be used to evaluate several properties of double emulsions, like partial coalescence and emulsion stability.
