As a guest PhD student from the Research Center in Applied Science and Advanced Technology (CICATA) affiliated to the National Politecnic Institute (IPN) in Mexico, Edgar Alan is doing research on the study of protein-polysaccharide interactions as carriers for active compounds applied on food , specialized in starch-gelatin system.  He is experienced on mechanical, thermal and structural properties of biopolymers and food texture analysis.


He graduated in a Master of Advanced Technology in CICATA-IPN working on the physicochemical characterization of myofibrillar proteins for food products. He is currently developing a project in Ugent focusing on the production of nanocomplexes as carriers of food colorants.
