Jianfeng joined the PaInT group as a PhD student in the autumn of 2018.  Months before, he obtained a Master's degree on the study of efficient preparation of chitosan oligosaccharide by specific enzyme hydrolysis at South China University of Technology (SCUT).

His PhD topic focusses on improvement of heat and emulsifying stability of skim milk powder (SMP) upon glycation by heat treatment. His work will shine a light on a deeper concept of heat-induced protein-sugar conjugation and its effects on functional properties and on heat sensitivity reduction of whey proteins in SMP and whey protein stabilized emulsions.
