👉 Can agro-industrial #food #waste be used as a sustainable source of functional plant #protein?

👉 PhD student Ben Van den Wouwer is studying alternative extraction technologies for protein extraction, such as ultrasound waves and fermentation, and their impact on protein yield, structure, and functionality. By using food industry side streams as matrix, the insights will contribute to a more circular food industry. The research is conducted under supervision of Prof. Katleen Raes and Dr. Kristof Brijs (Laboratory of Food Chemistry and Biochemistry KU Leuven).

Ben’s PhD is part of the cSBO project #EffSep in which eight research groups of Universiteit Gent, KU Leuven, and UHasselt combine their expertise to gain insight in the stability and extraction of macro-components from food industry side streams. The project is financed by VLAIO and coordinated by Flanders'FOOD.
