Huifang ZhangPhD student Huifang Zhang is studying the effects of fermentation on bee pollen cell wall degradation, polyphenol composition and bioactivity. Bee pollen is a highly valuable source of human nutrients due to its extensive nutritional and therapeutic properties. However, the complexity of the pollen wall largely limits the release of nutrients and the play of functional activities. It has been found that microbial fermentation can break the pollen wall. Besides, microbial fermentation can promote the release of active ingredients from plant substrates or food materials, which is not only a green and environment-friendly approach but also conducive to enhancing the added value of fermented products. Therefore, the purpose of this study is to employ fermentation to disrupt the bee pollen wall and facilitate the release of nutrients and bioactive substances, thereby elevating its biological activity. This endeavour seeks to lay the theoretical foundation for the advanced processing of bee pollen. Her research is conducted under the supervision of Prof.ย Katleen Raes.
