Determining and optimizing the nutrient composition of animal source foods

Animal source foods are appreciated for their high nutritional value due to their composition and high digestibility. Whereas the protein composition and quality is mainly determined by animal factors, the fatty acid composition of animal source foods is amenable to modification by the dietary fat source, e.g. to increase the content of long chain n-3 polyunsaturated fatty acids.
