Summary

The cultivation of Brussels sprouts is typically for Belgium. This production results in high amounts of byproducts, as for each ha 18 to 25 tons of stalks are becoming available, resulting for Flanders in more than 50000 tons of stalks on a yearly base. This allows us to look to different high added value valorization potentials. Different parts of the stalks are separated so a fraction enriched in fibers and a juice are obtained. Fibers can find their application as raw material for paper. The juice contains several high added value compounds that can be valorized in the oleochemical sector for the production of soaps, candles and lubricants.
