Danyang Liu will discuss the effects of non-thermal plasma on lipid oxidation, focusing on reactive species and oxidation markers.

Fien De Witte will demonstrate the mapping of impacted length scales in fat crystal networks using advanced techniques.

Ivana Penagos will present her research on synchrotron X-ray scattering techniques to understand the self-assembly of triglycerides during crystallization, aiming to engineer novel fat structures.
