Lecture by Nadege Rochut (Danone, Paris) about dietary protein shift, innovation, industrial challenges, plant based drinks and dairy alternatives.

A lecture will be given with respect to the industrial challenges presented during the development of plant based drinks as alternatives for dairy products. The lecture will be followed by a Q&A session and one to one meetings between PhD students and the industrial expert to share her experiences with product development in an industrial context.

The dietary protein shift forces the food industry to develop innovative products which act as an alternative for the classical animal based products. Also in a traditional dairy company such as Danone this results in challenges to develop plant based protein products with similar physico-chemical and processing properties as the traditional dairy products.
